Harvest Avocados.

Did you know that an avocado is a fruit, not a vegetable? Honestly, I could eat my weight in these funky veg-like fruits. I like avocados served lots of ways- whole with a little salt, pepper, and lime and plantain chips, sliced on top of soup, and now stuffed to the max!! Avocados are incredibly nutritious and contain a wide variety of nutrients, vitamins, and minerals. They also contain a lot of monounsaturated fatty acids- the good fat, and are loaded with fiber. In addition to being a unique superfood, avocados are delicious and pair well with all sorts of food. They have a rich, creamy texture that will leave you wanting more! Y'all! Good gravy!!! These stuffed avocados… DELICIOUS. I could seriously eat two, seven, or maybe even twelve of these little guys! Every. Single. Day. End of story. I love, love, love them. They were so easy to make and looked like something you'd see at a five star restaurant.

Just like many of you, I live life on the go. Taking time for lunch is a luxury I rarely afford myself. I usually skip it. Not because of a lack of hunger but because I'm usually ill prepared or out of time. I'm on a quest to change my non-lunchin' life one quick and easy meal at a time! Today was the start of my new lunch goal and what a delicious start it was. I looked around the kitchen for something to make that would be free of my allergies, quick, and satisfying! The Harvest Avocado was born! I knew that we had several ingredients that were good on their own but would be like a firework show for your mouth when put together! I gathered the

ingredients and went to work. Feel free to adapt this recipe to your liking! Add or omit whatever you would like to make these Harvest Avocados a perfect fit for you! Don't forget to tag me if you try them! #daintyanddarlingindixie @lattesandmaskcara

 

Harvest Avocados

Prep Time: 10-15 min. Cook Time: 20 min. Total: 30-35 min.

6 Avocados

10 slices or 1 package of Bacon (I used Applegate Sunday Bacon)

For Chicken Salad: 1 1/2 - 2 C. Organic Chicken shredded or finely chopped

1/3 C. Cranberries (Dried no sugar added)

1/4 C. Organic Celery chopped

1 Small Apple sliced and cubed

1/2 Teaspoon Fresh Cilantro finely chopped

1/2 Teaspoon Lime Juice

1/2 Teaspoon Lemon Juice

1 Tablespoon + 1 Teaspoon Paleo Mayo

Pinch of Salt to taste

Pinch of Pepper to taste

Directions:

1. Preheat oven to 425 degrees

2. Lay bacon on roasting sheet and bake until crispy (10-15 min.)

3. Place chicken, cranberries, celery, mayo, salt and pepper in a bowl. 4. In a separate bowl mix apple, lemon juice, lime juice, and cilantro.

5. Add the apple mixture to the chicken mixture and fold together -Set aside

6. Slice your avocados and remove the pits (drizzle with additional lime juice and season with salt and pepper if desired)

7. Using an ice cream scoop or spoon fill avocado with the chicken salad.

8. Crumble bacon on each avocado

9. Garnish with fresh Cilantro if you would like

Enjoy!

 

I enjoyed mine with a side of salted/ peppered watermelon and plantain chips!
