Breakfast.

It could easily be said that it is my favorite meal of the day. I often joke about how I dream about what I'll eat for breakfast and then I wake up thinking about it. I just LOVE breakfast! Give me an assortment of waffles, pancakes, muffins, sausage, bacon, fruit, and allllllll the coffee! Whenever I first started to discover my allergies and went Gluten & Dairy Free my breakfast was eggs. Fried. Scrambled. Omelet. Every. Single. Day. I mean, don't get me wrong, eggs are delicious but only when eaten in moderation. Have you ever heard the phrase "too much of a good thing isn't a good thing"? That was the predicament that my breakfast was experiencing. I had to figure out something to spice things up! After trying store bought gluten free breakfast items and experimenting with a few different recipes I can say, without question, that I have finally found my new favorite breakfast!

Now, on to today’s recipe. Since this is my first recipe post ever, I wanted to share something very fun, delicious and hopefully a new staple for many of you – Blueberry Hand Pie Pop Tarts. This is something you can whip up in about thirty minutes or make a larger batch, and freeze so that you have extras that are easy to grab and toast on your way out the door. This Hand Pie is also perfect for serving at events/brunch/tea parties etc. Scoop any type of jam or even sweet potato inside, garnish with berries, place on a tray and see how many that can guess that this treat is actually Gluten, Grain, and Dairy Free. They offer the taste of a genuine pastry! No cardboard gluten free knock off here! In the south we have a phrase for something that tastes this good and that is "It makes you wanna slap ya mamma!" Well, I would NEVER slap my mamma but if ever there were a food that met it's match in this phrase it would be these Hand Pie Pop Tarts. Blueberry Hand Pie Pop Tarts

Prep Time: 10 Min.

Cook Time:

25 min.

Total: 35 min.

For Hand Pie Pop Tarts: 1 1/4 C Cassava Flour + more for rolling out 2 Tbs Honey 1 Tsp Gelatin 1 Tsp Salt 1/2 C Organic Unrefined Shortening 3/4 C Water + more for sealing pastries 1/2 C of Jam

For the Glaze: 1/2 C Organic Powdered Sugar 1 Tsp Vanilla (optional) 1 Tbs + 1 Tsp water 1 Scoop of Vital Protein Collagen

To Make Hand Pies: 1. In the bowl of a food processor or blender, mix together the Cassava flour, Honey, Gelatin, Salt, and Shortening. Add the Water and pulse to combine. If the dough struggles to combine then add an additional tablespoon of water. 2. Preheat oven to 425 degrees and line two cookie sheets with parchment paper 3. Roll out half of the dough onto floured Parchment paper. 4. Cut out desired shapes and sizes. Re roll scraps and repeat. 5. Using a flat spatula transfer the first batch of cut pieces to the baking pans and put a dollop of jam in each. 6. Dip your clean finger into water and run it around the edges of the pastry to dampen it. Cover these pieces with another piece of pastry and press together, crimping edge. 7. Gently press the center of the pastry to make sure the jam is spread throughout the inside of the pastry. 8. Bake until firm to the touch and golden brown around the edge 9. Let cool completely

To Make Glaze: 1. Whisk together all ingredients until smooth and shiny. 2. Drizzle over cooled pastry 3. Let dry 30 min.

Store in your fridge or freezer. Serve warm from toaster
